Why we make it this way
More meat. Less grease taking over the bite.
We chose inside round for a reason: we wanted a better balance of meat to grease in the finished po’boy.
Chuck brought a little more flavor, but it also left us with a greasier sandwich than we wanted. Inside round gave us the balance we were after—plenty of roast beef and rich gravy, without so much grease taking over.
That choice is where our roast beef story starts. We hand-cut Black Angus inside round into roughly two-inch pieces in our kitchen, then build flavor with our Cajun-Creole seasoning blend, garlic powder, bay leaves, onions, bell peppers, and garlic.
Then we give it six hours.
A great roast beef po’boy needs beef that pulls apart easily and gravy that stays with every bite. Here’s how we get there:
Hand-cut and season. We prepare the beef in our kitchen and season it before cooking.
Cook, covered, for six hours. We give the beef a full six-hour oven cook for that tender, pull-apart texture.
Hand-shred and return to the gravy. The beef goes back into its rich gravy before it ever meets the French bread.
We’ll take care of the cooking. You grab a seat, bring the family, or order ahead when dinner needs to fit between work, school, and practice.
